Gluten-free Vegan Breakfast Bread with Violet Honey

These are wild times my darling. How are you doing? In the time of writing this, we’re in May of 2020 and it’s apparent that the world will never quite be the same. We’re in the eye of this storm and when we come out the world will just be different. And that can be a hard concept to wrap our brains around. it is for me.

And I’m learning more about myself. I feel like we really see the fruits of our labor during times like this. The time and effort we’ve put in are now needing to be harvested. For me, I’m turning to my dried herbs from last years’s harvest – piling the oregano, thyme and garlic into our dishes. I’m leaning into my yoga practice. I’m diving deep for the knowledge I have on tapping into my inner calm and sourcing it from the Earth just by walking outside and sitting on the ground.

The lifestyle seeds I’ve sown are blooming for me now and I’m grateful.

And when I cook using those dried herbs from last year, very bite is a chance for nourishment and medicine. Using food as medicine has always been there for us of course, but now it’s just right there in my face – our immune system is more important than ever. Perhaps you’re feeling the same?

Emotionally, I can feel my spirit looking for comfort. And my family too. And nothing is quite as comforting as warm bread from the oven. We’re totally gluten-free in our house and rarely do we consume dairy. We just feel better without it. So I wanted to create a bread that’s comforting and quick and also full of nourishment for my family. And thus my breakfast bread was born.

Let’s dive into the recipe, shall we?

Preheat your oven to 375. Here’s what you’ll need:

Dry ingredients

  • 1 cup brown rice flour

  • 1/2 cup casava flour

  • 1/2 cup buckwheat flour

  • 1/4 cup teff flour

  • 1/4 cup sourgum flour

  • 1/4 cup arrow root flour

  • 1 1/2 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon sea salt

  • 1 tablespoon turmeric powder (anti-inflammatory, soothes aches and pains and inflamed conditions)

  • 1 tablespoon reishi powder (one of my favorite immune boosting herbs. You can find the powder at Jing Herbs.

  • 1/4 cup black sesame seeds (I love adding these for their grounding and fatigue fighting benefits. They also add a lovely crunch to the bread)

  • 3 tablespoons fresh chopped rosemary (amazing brain boosting herb that also has anti-bacterial and anti-inflammatory properties)

Wet ingredients

  • 1 1/2 cup hot water

  • 1 cup pureed apple (about 2 medium to large apples, cored and blended)

  • 1 tablespoon organic lemon juice

  • 3 tablespoons coconut oil

  • 2 tablespoons chia seeds

  1. To make your bread, you’ll start with the wet ingredients first because you’ll want it to sit for about 10 minutes to allow the chia to soak. Add your hot water, lemon juice, apple puree and coconut oil to your blender and blend quickly until combined. Add your chia seeds, stir and allow to sit while you prepare you dry goods.

  2. Add all of your dried items to a large bowl and gently whisk until combined.

  3. Line your 8×8 baking sheet with parchment paper. This will help you lift the bread out if you want to. It also keeps the bread from sticking.

  4. Now add your wet ingredients to the bowl of dry ingredients and stir until everything is combined. It will be a dark dough.

  5. Add your dough to your pan and spread evenly.

  6. Bake for 40-50 minutes. It will depend on your humidity level and oven so check at 40 minutes and keep in longer if needed. You basically want the middle to be firm.

We love ours warmed up with a drizzle of olive oil and violet honey on top. Violets are in season so I love to make this honey in the Spring. You can find more about that on my Instagram (IGTV) post here.
