Inspiration struck at our local health food store, Good Earth, a few weeks ago when I saw puffed millet cereal on the shelves. Only one ingredient ~ puffed millet, sweet!
I like to surprise our kids with a healthy sweet treat every so often. So I created my version of the rice crispy treats I grew up knowing. They were a staple Halloween treat in the 80’s. Yes, back when I was a kid, the neighbors often home-made treats – and we were allowed to eat them without fear of poison, etc. It was a good time to grow up.
Anything I make for my family is made with their health in mind – yes even sweet treats.
So I didn’t want to use processed sugar. I also wanted to up the nutrient and mineral content, which is where the hemp and reishi come into play.
- Millet is a gluten-free grain that’s actually pretty high in protein, while also containing loads of fiber and important minerals like iron, calcium and magnesium.
- Hemp seeds go on just about everything at our house – because they are very mild in taste so everyone in our family likes them. Hemp seeds are also a great easily digestible source of protein and Omega 3’s.
- Reishi – what can I say, it’s almost a magical herb. I’ve been taking Reishi for years because I can feel the benefits fairly quickly and I can feel the difference when I don’t take it. Reishi is a heart-opening herb that can help you stay more calm and peaceful when taken regularly. Reishi also happens to be one of the most powerful immune protector, fighting infection and preventing cancer.
My kiddos absolutely loved them (Sam and I did too)! And what I really love is knowing they are getting some serious nourishment along with the enjoyment of a home-made sweet treat. So enjoy this recipe and I hope you make them for someone you love – even if that someone is you!
- 3 cups puffed millet
- ½ cup maple syrup (we use local)
- ½ cup organic almond butter
- 1 teaspoon reishi powder (we use Jing Herbs)
- ¼ cup organic hemp seeds
- ¼ teaspoon sea salt
Instructions: Makes approximately 10-12 squares
1. Grease your glass dish. I recommend a 5×5 inch or no bigger than an 8×8 inch.
2. Slowly warm maple syrup and almond butter over stove on low until it all melts down and looks like carmel. Depending on how dry or wet your almond butter is, it will take approximately 5-10 minutes.
3. Turn off heat. Add reishi powder and stir. Add salt and stir.
4. Add hemp seeds and stir
5. Add your puffed millet and stir gently until all ingredients are mixed together
6. Place your mixture in your greased glass dish and press down until it’s evenly dispersed and smooth on top.
7. Place your dish in the freezer for an hour to set up.
8. Take out and cut into squares – sizes of your choice.
